Have you seen the re-done footage of Yoda from Episode I? There's a single shot of it (looks kinda rough, animation-wise) on the Episode III bonus features. Cant remember which featurette/documentary, but I did recognize it as a scene from Episode I re-done with a CGI Yoda.
And I hear they're going to use CGI to replace the random black dude posing as Mace Windu with another random black dude who looks a little more like Sam Jackson.
In the last scene of Phantom Menace, Sam Jackson wasn't there for shooting, so they replaced him and hoped nobody would notice.
