If you want some good tutorials on acid, just call over the kids always standing outside the local gas station who're groping the walls. They may know about sound forge too. I might be wrong, but don't the manufactor's website have tutorials?
I say just try experiment with every setting, just go wild with it. That's usually the best way to learn something, trial and error.

Audition all the way! I dunno, I'm partial to Adobe, I use them pretty much exclusively for all my video/audio and the occasional image editing needs. Can't beat the Audition/Premier/Encore/Photoshop combo.
